Ability to create a series of tasks that will cancel if customer completes meeting

Hello, I work in after sales and make majority (80%+) of my income off of doing a post-sales appointment with customers to review the technology on their vehicle. I have email and phone call follow ups scheduled on a sold order workflow to remind customers who have yet to return for the class to schedule their appointment.
What I want is simple, the ability to mark the customer has having completed their appointment and prevent future emails and phone call tasks from spamming the customer about an appointment they have completed. It's wild that I cannot prevent a reminder email for a completed task from sending to a customer. My emails are currently turned off and that means that for the last 2 weeks no customer has gotten remainders to schedule their appointment. This is going to massively increase my work load having to manually follow up or lose me a ton of money in missed opportunities.
